Craving avocados but it is too cold for a salad? The South African Avocado Growers’ Association (SAAGA) has shared this recipe, which is ideal for colder weather. With the local avocado industry unable to export as much as planned due to COVID-19, local consumers will have more avocados to enjoy this season. So, support a farmer by buying some avocados and trying this innovative and unusual dish.
Makes 24 meatballs.
500g ground chicken
1 large egg
⅓ cup breadcrumbs
½ cup mashed avocado
4 small courgettes, grated
2 tablespoons minced onion
1 teaspoon Italian seasoning
¾ teaspoon salt
½ teaspoon red pepper flakes (optional)
2 garlic cloves, crushed
Shredded red cabbage or coleslaw
100g piquant peppers, sliced
2 ripe avocados, sliced
Fresh coriander and micro herbs to garnish
- Combine the meatball ingredients in a large bowl and mix thoroughly.
- Using an ice cream scoop, shape the mixture into balls and place them on a greased baking sheet, about 4cm apart. If you do not have an ice cream scoop, use a heaped tablespoon to measure the mixture and shape them with your hands (keep a small bowl of water handy for dipping your hands).
- Spray the tops of the balls with a coating of non-stick cooking spray and bake with an air fryer for 8-10 minutes or cook in a pre-heated oven at 180°C for 15-20 minutes until golden brown and cooked through.
- To serve, arrange the salad, salsa, piquant peppers, meatballs and sliced avocado on top of the tortillas. Garnish with fresh coriander and lime wedges. – Press release, SAAGA
