Making something else with maize meal other than the various traditional ways of making porridge, might seem like a challenge, but for our Farm fare team it was a breeze. These little a-maize-balls can be compared to potato croquets, but are made with maize porridge instead. Serve as a side dish or a starter.

Serves 4–6


2 cups maize meal

4 cups water

1 teaspoon salt

1 onion, chopped

½ punnet of mushrooms, chopped

1 yellow pepper, chopped

4 sweetcorns, kernels cut off

1 cup grated cheese

½ cup flour

3 eggs, beaten

½ cup maize meal

Oil for frying


  1. Use the water, maize meal and salt to make a stiff porridge. Set aside to cool a bit.
  2. Fry the veggies in some oil until tender. Mix into porridge and add grated cheese.
  3. Form the mixture into balls. Dip each in flour, egg and maize meal.
  4. Deep fry until balls are golden brown and crispy.
